Low Carb Appetizers

These low carb appetizers are easy to make and really delicious, and very popular at parties and potlucks. These are based on my low carb pie crust recipe which I use as a base for miniature tart crusts.



Crab Bites

  • 1 can crab meat, drained and picked over for shells bits
  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped red bell pepper
  • 2 tablespoons finely chopped celery
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard

Directions

  1. Mix all ingredients.
  2. Spoon into pre-baked miniature tart crusts.
  3. Bake for 10 minutes at 350 degrees F or until bubbly.


Taco Bites

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 4 oz. can of green chilies
  • 2 teaspoons ground cumin
  • 2 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1/2 cup sour cream
  • 2 to 3 cups grated Monterey Jack cheese or cheddar cheese

Directions

  1. In a medium skillet, saute onions in butter until soft.
  2. Add the ground beef and saute until brown and cooked through.
  3. Add the chilies and spices and simmer for 5 minutes.
  4. Turn down heat and add sour cream and cheese.
  5. Simmer on low for about 15 minutes, stirring occasionally to mix.
  6. Spoon into pre-baked miniature low carb pie crusts.
  7. Bake for 10 minutes at 350 degrees F or until bubbly.



Veggie Bites

  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup finely grated carrot
  • 1/4 cup finely chopped broccoli
  • 1 teaspoon salt
  • 1/2 teaspoon seasoned salt

Directions

  1. Whip the cream cheese until fluffy.
  2. Add the cream and sour cream. Add the remaining ingredients and mix well.
  3. Spoon into pre-baked miniature tart crusts.
  4. Bake for 10 minutes at 350 degrees F or until bubbly.

These are just the tip of the iceberg in making low carb appetizers. You can take most any thick casserole mixture and spoon it into the mini tarts crusts and make a new appetizer combo.
