Low Carb No Bake Cheesecake

These no bake cheesecake recipes are quick and easy. You can whip up one of these in less than 5 minutes and eat it immediately, or let it sit in the refrigerator until it sets for a thicker cheesecake texture.

Lemon Cheesecake

  • 8 oz cream cheese, softened
  • 2 oz heavy cream
  • 1 teaspoon Stevia Glycerite
  • 1 teaspoon (packet) Splenda or other powdered or liquid low carb sweetener
  • 1 T lemon juice
  • 1 teaspoon of vanilla flavoring (I use Frontier Organic)

Mix all ingredients together and whip to a pudding consistency.  Spoon into small serving cups and refrigerate until set.

Note: this is also really good with finely shredded coconut mixed in and sprinkled on top.



White Chocolate Raspberry Cheesecake Fluff

  • 8 oz cream cheese, softened
  • 2 oz heavy cream
  • 1 teaspoon Stevia Glycerite
  • 1 teaspoon low sugar raspberry preserves
  • 1 tablespoon Da Vinci Sugar Free Syrup, White Chocolate flavor

Mix all ingredients together and whip to a pudding consistency. Spoon into small serving cups and refrigerate until set.

Chocolate Chip Cheesecake

  • 8 oz cream cheese, softened
  • 2 oz heavy cream
  • 1 teaspoon Stevia Glycerite
  • 1 teaspoon (packet) Splenda or other powdered or liquid low carb sweetener
  • 1 ounce Enjoy Life Mini chocolate chips

Mix all ingredients except chips and whip to a pudding consistency.  Fold in chocolate chips. Spoon into small serving cups and refrigerate until set.

Chocolate Cherry Cheesecake

  • 8 oz cream cheese, softened
  • 2 oz heavy cream
  • 1 teaspoon Stevia Glycerite
  • 1 tablespoon dutch process cocoa powder
  • 1 tablespoon Da Vinci Sugar Free Syrup, Cherry flavor
  • 3-5 drops EZSweet liquid splenda (to taste)

Mix first five ingredients and whip to a pudding consistency. Add Ezsweet drop by drop until mixture is sweet enough to your taste.  Spoon into small serving cups and refrigerate until set.
