Ellen's Chaffle Recipes

These chaffle recipes are my take on this popular keto treat. Chaffles is a combo word of cheese and waffles. Basically, you mix eggs and cheese with various additions and then cook the batter on a waffle maker like this one.

There are many different recipes online, and the goal of most of them seems to be creating a crispy chaffle. Mine are not crispy. I’ve gone for excellent flavor and a bread consistency so I can have sandwiches in a jiffy.

Note: Don’t skip the yeast and butter powder in these chaffle recipes, they really enhance the flavor of the finished chaffle.

Ellen's Basic Chaffle Recipes

These chaffles are really good with just about any sandwich filling. My favorite is a keto chaffle breakfast sandwich. I spread two of these chaffles with whipped cream cheese and Buitoni pesto, then add two cooked Smithfield sausage patties. Way better than fast food!

This chaffle recipe also makes a great ham sandwich, and they are good with tuna salad too.

Makes 7 mini chaffles

  • 1 cup shredded Mozzarella
  • 1 cup shredded Colby Jack
  • 3 eggs
  • 2 T nutritional yeast
  • 1 T butter powder
  • ½ teaspoon xanthan gum (optional)
  • 1 teaspoon onion-garlic salt (such as Jane’s crazy salt)
  1. Pulse the cheese in a food processor to a finer consistency.
  2. Whisk eggs with yeast, butter powder, xanthan and seasonings.
  3. Mix in cheese.
  4. Heat waffle maker.
  5. Add 2-3 tablespoons of mixture to waffle maker and close lid.
  6. When light shuts off, remove cooked chaffle and place on a cooling rack
  7. Repeat until all of the mixture is used.
  8. Store in an airtight container in the fridge.

Pizza ChafflesPizza Chaffles

Quick Pizza Base Chaffles

Makes 2 mini chaffles.  As mentioned, don’t skip the yeast and butter powder, they really enhance the flavor.

  • 1 egg
  • 1 T nutritional yeast
  • 1 teaspoon butter powder
  • 1 teaspoon onion-garlic salt (such as Jane’s crazy salt)
  • ½ teaspoon Italian seasoning
  • 1 teaspoon pizza seasoning
  • 1 cup shredded Mozzarella
  • ¼ cup shredded Parmesan
  • 15 mini pepperoni slices, or 6-8 normal size, chopped into small pieces (Optional but good if you making pepperoni pizzas.
  1. Pulse the cheese in a food processor to a finer consistency.
  2. Whisk eggs with yeast, butter powder and seasonings.
  3. Mix in cheese.
  4. Heat waffle maker.
  5. Add 2-3 tablespoons of mixture to waffle maker and close lid.
  6. When light shuts off, remove cooked chaffle and place on a cooling rack
  7. Repeat until all of the mixture is used.
  8. Place the chaffles on a foil covered cookie sheet.
  9. Cover the chaffles with pizza sauce, pepperoni and other desired toppings and more cheese, and put under the over broiler to brown top.

Pizza Bread Chaffles

Makes 5 chaffles. As mentioned, don’t skip the yeast and butter powder, they really enhance the flavor.

  • ½ cup shredded Parmesan
  • 1/3 cup mini pepperoni slices
  • ¼ cup shredded Colby jack
  • ½ cup shredded Mozzarella
  • 2 T nutritional yeast
  • 1 T butter powder
  • 2 tsp pizza seasoning
  • 1 tsp onion garlic salt
  • 3 large eggs
  1. Lightly process dry ingredients together to a crumbly texture using either a hand blender or food processor.
  2. Add eggs and stir until ingredients are mixed together to form a thick, wet paste.
  3. Spoon 2-3 tablespoons of mixture onto waffle maker to cook.
  4. When light shuts off, remove cooked chaffle and place on a cooling rack 
  5. Repeat until all of the mixture is used.
  6. Dip cooked chaffles into warm pizza sauce, or use as a base for pizza toppings for oven-cooked pizza.

Cinnamon Roll Chaffle and Cream Cheese Frosting

Makes 2-3 chaffles

  • ½ cup shredded Mozzarella
  • 1 teaspoon butter powder
  • 1 T nutritional yeast
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cardamom
  • ½ teaspoon vanilla extract
  • 2 T Swerve confectioner’s sweetener
  • 1 T coconut flour or 2 T almond flour
  • 1 egg
  • 2 oz cream cheese, softened
  1. Pulse the Mozzarella cheese in a food processor to a finer consistency. Add the dry ingredients and pulse to mix. Add eggs and cream cheese, and pulse until mixture is smooth.
  2. Heat waffle maker.
  3. Add 2-3 tablespoons of mixture to waffle maker and close lid.
  4. When light shuts off, remove cooked chaffle and place on a cooling rack
  5. Repeat until all of the mixture is used.
  6. Store in an airtight container in the fridge.

Cream Cheese Frosting

  • 6 ounces cream cheese, softened
  • 2 T butter, softened
  • 3 T heavy cream
  • 2-4 T Swerve confectioners sweetener
  • ½ teaspoon vanilla extract
  1. Combine ingredients and whip until smooth.
  2. Spread or drizzle over the chaffles.

Mini Chocolate Chip Chaffles

Makes 7 mini chaffles

  • 1½ cups shredded Mozzarella
  • 2 eggs
  • 1 oz cream cheese, softened
  • 1 T butter powder
  • 1 T nutritional yeast
  • 1/2 cup Swerve confectioner’s sweetener
  • 1/2 cup Toll House mini chocolate chips
  1. Pulse the Mozzarella cheese in a food processor to a finer consistency. Set aside.
  2. Whip the eggs and cream cheese together until smooth. Add the butter powder, yeast and sweetener and mix well.
  3. Mix in cheese, making sure it is completely incorporated into egg mixture.
  4. Stir in chocolate chips.
  5. Heat waffle maker.
  6. Add 2-3 tablespoons of mixture to waffle maker and close lid.
  7. When light shuts off, use a fork and a pair of tongs to remove cooked chaffle and place on a cooling rack (the chocolate will make them soft).
  8. Repeat until all of the mixture is used.
  9. Let cool, and store in an airtight container in the fridge.
