Spinach Salad Recipe

This basic spinach salad recipe can be changed up by adding different types of onions, cheese and nuts. The tangy cheeses taste best with spinach. Choose blue cheese, feta, gorgonzola, and other tart types.

Spinach is one of the best vegetables to include on a low carb diet. It is chock full of vitamin A, vitamin K, magnesium and potassium. I try to include several helpings of raw spinach in my diet each week. This recipe is one my favorites ways to eat spinach.



Basic Spinach Salad

  • 3 to 4 cups washed baby spinach leaves
  • 1/2 cup thinly sliced red onion
  • 3-4 tablespoons crumbled blue cheese
  • 1/4 cup slivered almonds or chopped macadamia nuts
  • 1/2 cup cooked and crumbled bacon

  1. Divide the spinach leaves between four salad plates.
  2. Lay the thinly sliced red onion over the spinach
  3. Sprinkle on the cheese, nuts and bacon crumbles.
  4. Spoon on your choice of low carb salad dressing such as Feta Vinagrette and toss lightly.


Spinach and Apple Salad

  • 3 to 4 cups washed baby spinach leaves
  • 1/2 cup thinly sliced red onion
  • 3-4 tablespoons crumbled blue cheese
  • 1/2 small apple, cut into 1/4 inch cubes

  1. Divide the spinach leaves between four salad plates.
  2. Lay the thinly sliced red onion over the spinach on each plate.
  3. Sprinkle on the apple.
  4. Spoon on your choice of low carb salad dressing such as Feta Vinagrette and toss lightly.
